Safflower Oil Benefits: What Research Shows About This Plant-Based Oil

Safflower oil comes from the seeds of Carthamus tinctorius, a thistle-like plant cultivated for thousands of years. Today it's a widely used cooking oil and increasingly a subject of nutrition research — largely because of its unusually high fat content and how that fat composition may interact with cardiovascular and metabolic health.

What Makes Safflower Oil Nutritionally Distinctive

The defining characteristic of safflower oil is its fat profile. There are two main commercial varieties, and they differ significantly:

High-oleic safflower oil is closer in composition to olive oil and has a higher smoke point, making it more stable at cooking temperatures.

Both types contain vitamin E, primarily in the form of gamma-tocopherol, which functions as a fat-soluble antioxidant in the body.

What the Research Generally Shows

Cardiovascular Markers

Much of the research on safflower oil has focused on blood lipids. Polyunsaturated fats — particularly linoleic acid — have been studied for their relationship to LDL cholesterol levels. Replacing saturated fats with polyunsaturated fats is associated, in a broad body of research including large observational studies and controlled trials, with reductions in LDL ("bad") cholesterol.

A frequently cited small clinical study found that daily consumption of safflower oil over 16 weeks was associated with improvements in certain markers of metabolic health in postmenopausal women with type 2 diabetes, including HDL cholesterol levels and inflammatory markers. This was a limited study, and its findings shouldn't be generalized broadly — but it contributed to ongoing interest in the oil's cardiovascular profile.

High-oleic safflower oil, with its monounsaturated fat content, has been studied in similar contexts. Monounsaturated fats are associated in research with maintaining HDL levels while reducing LDL — a pattern also observed with olive oil consumption.

Inflammation

Linoleic acid sits at the start of the omega-6 metabolic pathway, which can produce both pro-inflammatory and anti-inflammatory compounds depending on how it's metabolized. This has been a source of ongoing debate in nutrition science.

Some researchers have raised concerns that very high omega-6 intake — particularly in the context of a low omega-3 diet — may tip toward pro-inflammatory pathways. Others argue that linoleic acid itself does not act as a direct inflammatory driver and that the research doesn't support this concern at typical dietary levels. How safflower oil affects any given person depends on a wide range of variables:

Most research on safflower oil involves small sample sizes, short durations, and specific populations. Large-scale, long-term randomized controlled trials specifically on safflower oil are limited. Much of what's understood about its likely cardiovascular effects is extrapolated from broader research on polyunsaturated and monounsaturated fats — research that is generally robust but not always specific to this oil. 🫀
